Layla’s Mini Pear Quiche’s

Ingredients:
- 1 kg puff pastry
- For filling:
- 2 abate fetel pears, peeled, cored and cut into cubes
- 1 small onion chopped
- 2 spinach leaves chopped
- salt
- 1 teaspoon oil
- 15 ml butter
- white sauce:
- 2 eggs
- 2 cups milk
- 2 tablespoon butter
- 3 tablespoon flour
- grated cheddar cheese, or mozzarella or feta depending on preference
Method:
- Preheat oven to 200 degrees Celsius
- Fry chopped onion in butter and oil in a large saucepan
- Add chopped spinach, and cook for 1 min
- Add salt to taste, and add pears
- Steam pears for 1 min
- Strain in a colander until water is drained
- In a bowl mix ingredients for white sauce
- mix eggs, milk, flour, butter and grated cheese
- heat mixture in sauce pan stirring constantly until mixture thickens
- Add the strained onion, pear and spinach mixture to the white sauce and mix well and remove from heat
- Roll out puff pastry and use a round cookie cutter
- place the cut out pastry into cups of a muffin tray
- Place 1 tablespoon of filling mixture into each pastry case
- Grate cheese over
- Bake at 200 degrees Celsius for 10 minutes
- Reduce heat to 180 degrees Celsius bake for a further 5 minutes or until done
- Remove from oven and allow to cool
- Serve and enjoy
