Layla’s Mini Pear Quiche’s

Ingredients: 

  • 1 kg puff pastry
  • For filling:
    • 2 abate fetel pears, peeled, cored and cut into cubes
    • 1 small onion chopped
    • 2 spinach leaves chopped
    • salt
    • 1 teaspoon oil
    • 15 ml butter
  • white sauce:
    • 2 eggs
    • 2 cups milk
    • 2 tablespoon butter
    • 3 tablespoon flour
    • grated cheddar cheese, or mozzarella or feta depending on preference

Method: 

  1. Preheat oven to 200 degrees Celsius
  2. Fry chopped onion in butter and oil in a large saucepan
  3. Add chopped spinach, and cook for 1 min
  4. Add salt to taste, and add pears
  5. Steam pears for 1 min
  6. Strain in a colander until water is drained
  7. In a bowl mix ingredients for white sauce
    1. mix eggs, milk, flour, butter and grated cheese
    2. heat mixture in sauce pan stirring constantly until mixture thickens
  8. Add the strained onion, pear and spinach mixture to the white sauce and mix well and remove from heat
  9. Roll out puff pastry and use a round cookie cutter
  10. place the cut out pastry into cups of a muffin tray
  11. Place 1 tablespoon of filling mixture into each pastry case
  12. Grate cheese over
  13.  Bake at 200 degrees Celsius for 10 minutes
  14. Reduce heat to 180 degrees Celsius bake for a further 5 minutes or until done
  15. Remove from oven and allow to cool
  16. Serve and enjoy
