Katherine’s Pear and Walnut salad with Blue Cheese Dressing

Ingredients for blue cheese dressing:

  • 1/3 cup mayonnaise
  • 1/3 cup plain yoghurt
  • 50g crumbled blue cheese
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Pinch of black pepper

Method for blue cheese dressing: 

  1. Add mayonnaise, yoghurt, lemon juice, salt, pepper and half the crumbled blue cheese into a blender
  2. Blend until smooth and creamy
  3. Pour the dressing into a bowl or jug for serving and mix in the other half of the crumbled blue cheese

Ingredients for pear and walnut salad 

  • 2 cups baby spinach
  • 2 stalks of celery
  • 2 Abate Fetel pears
  • 70g raw walnuts
  • sprig of fresh parsley

Method for Pear and Walnut Salad 

  1. Peel Abate Fetel pears, slice in half and remove the core
  2. Slice Abate Fetel pears thinly
  3. Roughly chop the celery and walnuts
  4. Combine the baby spinach, sliced abate fetel pears, chopped celery, and chopped walnuts
  5. Arrange on plate and granish with parsley
  6. Pour the blue cheese dressing slowly over the pear and walnut salad as you wish
  7. Add ground pepper to taste, serve and enjoy
