Kaish’s Pear Galettes with Orange Custard


(makes 6)

  • Pie crust dough
    • 2 and a quarter cups cake flour
    • 1 cup cold butter
    • 6 tablespoons cold water
    • 1 tablespoon lemon juice or vinegar
    • 3/4 teaspoon fine salt
  • For filling:
    • 4 cups sliced pears
    • half cup dark brown sugar
    • 1 teaspoon cinnamon powder
    • 6 tablespoon butter
    • sauce for pie
    • half cup of sour cream
    • 2 tablespoon dark brown sugar
    • half teaspoon vanilla essence


  1. Start with pie crust. Will need to rest for 2 hours
  2. Stir the flour, sugar and salt in a mixing bowl
  3. Cut in the the cup of butter into the mixture until yellow and forms a light crumble
  4. Mix the water and lemon and add to the mixture. Mix to make a dough being careful not to over mix
  5. Shape the dough into a log shape and chill for 2 hrs
  6. Prepare the filling by combining the pear with cinnamon, and brown sugar and set aside
  7. Once dough has rested and ready to bake preheat oven to 190 degrees Celsius.
  8. Cut the rested dough into 6 rounds and roll out to form a disc shape
  9. Place sauce onto disc, followed by a handful of the pear mix
  10. Fold the edges of the dough disc up the sides of the filling mix in center to make a cup shape
  11. Brush on egg wash to dough and top of Galette
  12. Bake for 25 minutes at 90 degrees Celsius
  13.  For orange add a tablespoon of orange juice to custard and mix
  14. Serve pear Galette with a tablespoon of orange custard on top
