Depashni’s Pear muffins with a cinnamon, sugar and almond crumble

Ingredients 

  • 2 cups self raising flour
  • 1/2 cup brown sugar
  • 1/4 cup oil
  • 2/3 cup milk
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon powder
  • 2 eggs
  • 3 Abate Fetel pears
  • 1/2 golden sultanas (optional)
  • For crumble topping:
    • 1 teaspoon cinnamon powder
    • 2 tablespoons brown sugar
    • 2 tablespoons flour
    • 2 table spoons flaked almonds

Method

  1. Preheat oven to 180 degrees Celsius
  2. Grease muffin tray with butter
  3. Peel, core and grate the Abate Fetel pears
  4. Sift the self raising flour and combine with brown sugar and cinnamon in large mixing bowl
  5. Whisk the oil, milk, vanilla essence and eggs in another mixing bowl
  6. Add the whisked wet ingredients to the dry ingredients
  7. Add the grated Abate Fetel pears and sultanas if using them
  8. Combine well without over mixing the batter
  9. Spoon the mixture into muffin tin to full each cup about 3/4 full
  10. Make the crumble topping
    1. mix the cinnamon, bown sugar, flour and almond flakes
    2. mix until it has a consistency of wet sand
  11. Sprinkle the crumble mixture over muffins
  12. Bake for approximately 20 minutes
  13. When cooked remove from oven and allow to cool on cooling rack
  14. Serve and enjoy
